Brinjal chips

 

Ingredients for Cheesy Brinjal chips

Brinjal.                     2 

Bread crumbs.       1 cup

Grated cheese.       1/2 cup

Flour                         1/2 cup 

Eggs                          2

Oil.                            For frying

Salt                            to taste

    How to make brinjal chips

Wash brinjals , slice thinly and drop into a bowl of water to avoid browning .

In a bowl, mix flour and salt to taste ,in a second bowl beat eggs and keep aside; in a third bowl, mix breadcrumbs and cheese together.

Remove brinjal slices from water and squeeze out excess water .

Dip each slice first into flour ,then into eggs ,and finally into breadcrumb -cheese mixture, pressing to coat .

Once the chips are coated, heat oil in a frying pan over medium heat.

Brinjal Chips

Carefully place brinjal slices into the oil and fry for about a minute on each side,until golden and crispy.

Drain on absorbent paper.serve with tomato ketchup.
